Aromas of black cherry and blackberry have complexities of vanilla and cocoa. Dark, brambly fruit and strawberry jam flavors combine in the mouth of this complex blend. The wine has a rich mouthfeel, with soft, round tannins and a lovely lacing of toasty vanilla in the finish. Grapes were destemmed only, and sent without crushing directly to temperature-controlled stainless steel tanks. The must cold-soaked for 2 days before inoculation with yeast to begin fermentation. The new wine was pressed at dryness and inoculated for malolactic fermentation.
